Kangaroo Mince Rissoles & Meatloaf

1 kg kangaroo meat
1 onion, finely chopped
2 garlic cloves, finely minced
1 apple, grated
3/4 cup sugar-free tomato paste (approx)
A handful each of chopped basil, oregano & parsley (Could use a tablespoon or so
of dried)
Freshly-ground black pepper - I used about 1-2 teaspoons
A dash of salt
1 tsp approx of sweetener (I used Xylenol)
A slurp of sugar-free tamari
A good slosh of red wine
A small glug of balsamic vinegar
2 eggs, lightly beaten
Unprocessed bran - enough to make the mixture stick together.
Mix all together. You can use your hands and have fun - like when we used to
make mud pies. :-)
I made half the mixture into hamburgers, and put the other half into a loaf pan.
For the meatloaf: Preheat oven to 180C and bake approx 35 mins.
